Losing weight or adopting a healthy lifestyle can be quite a tall order, especially when you have to prepare meals from scratch because the easy stuff just isn’t healthy enough. However, if you use your time and effort efficiently, you can save yourself from worrying about your next day’s meals.
Here is a quick and easy recipe that you can prepare beforehand in parts. It doesn’t contain a curry or sauce so you can pack it in a box to take to work, the ingredients aren’t hard to find and it takes around 30 minutes to prepare and cook.
What you need
1/2 skinless chicken breast
1 cup button mushrooms, sliced
1 Tbsp chives (or spring onions as per your preference)
1 Tbsp olive oil
1 medium sweet potato
Salt and pepper according to taste
Red chili powder to sprinkle
Method
In a 180°C oven, bake chicken, topped with mushrooms, chives, seasoning, and oil, for 15-20 minutes. Microwave sweet potato for five to seven minutes and slice. To add a slight kick, add a tsp. of tobacco or hot sauce on the chicken before putting in the oven.
